Cook on low 8-10 hours, or high 6 hours. Remove ham hock. Shred meat from bone and return to crockpot. Add any additional diced ham from leftovers you may have. Remove bay leaf before serving.

If anyone wants thick soup, you can uncover after the 8-10 hours and simmer on high til desired consistency is reached.

Yum, yum! Wish I had a ham hock today...
The split pea soup was wonderful. We didn't have ham hock so we tossed in leftover roast pork. This is definately a make again recipe.

Just found this awesome dessert which I made this weekend - it was gone in about 5 minutes and I had to make a second batch to satisfy my company!

Caramel-Apple Pudding Cake

1 cup all purpose flour
1/3 white sugar
1 tsp baking powder
1/4 tsp cardamom & dash of cinnamon OR 1/2 tsp cinnamon
1/2 cup milk
2 tbs cooking oil
1/2 cup chopped pecans
1/2 cup dried apple or pear pieces
1 cup packed brown sugar
1 cup water
1 cup apple juice
2 tablespoons margerine or butter
1 tablespoon finely chopped crystallized ginger (or 1 tsp ground ginger)

Mix flour, sugar, baking powder, spices, milk & oil. Stir in the nuts & dried fruit. Spread the batter evenly on the bottom of a 3.5 or 4 quart slow cooker.

In a small saucepan combine brown sugar, water, apple juice, butter and ginger. Bring to boiling. Boil for 2 minutes. Pour mixture evenly over the batter in the slow cooker.

Cover and cook on high for 2 to 2.5 hours (low 4-5 hours) until a toothpick inserted 1" into the center of the cake come out clean.

Serve with ice cream if desired.

Ok the mac & cheese recipe listed above is almost ready in the crockpot...any other new recipes people want to try??? I have been trying many of them on this thread and they have ALL been wonderful

I made the chicken with salsa over rice and it was delicious. I used boneless skinless chicken thighs. Very simple and delicious. This week I'm going to try one of the other recipes

Here one for Vegetarian Tomato sauce that went over well last week:
(I made it for dinner with regular pasta one night, then used the leftovers in the lazy-day lasagne recipe).

Heather's Veggie Tomato Sauce

1 large onion
1 small zucchini
2 green peppers
1 container of mushrooms
1/2 pound baby carrots
28 Oz diced tomatoes (2 14 oz cans)
1 can (15 oz) tomato sauce
1 tsp salt
1 tsp italian seasoning
1 bay leaf
1 tsp basil
1/2 tsp oregano
1/2 cup flax seeds (if desired for those extra omega 3s!)


Chop the vegies (I like mine very fine so I use a food processor but the chunkiness is up to you). Add everything to a 3-4 quart slow cooker (add more water if it looks too thick). Cook on low for 6-8 hours (or until you get home & veggies are soft). Add extra spices to taste.


Lazy-Day Lasagna

1 container (15 Oz) ricotta cheese
1/2 cup parmesan cheese
2 tbs chopped dried parsley
1.5 tsp dried oregano leaves
1 cup frozen chopped spinach (optional)
7 cups pasta sauce (or more if you like it really saucy)
12-16 uncooked lasagna noodles (use spinach or whole wheat for extra healthy lasagne)
2 cups shredded mozarella cheese



1) Mix ricotta cheese, parmesan cheese, parsley, oregano and spinach (if using).
2) Spread 2 cups pasta sauce in ungreased 13X9X2" pan. Cover with noodles. Spread ricotta mixture over noodles. Cover cheese with pasta sauce & more noodles. Repeat with another 2 cups pasta sauce and 4 noodles. Spread remaining pasta sauce & cover with mozarella cheese.

3) cover & bake for 30-45 minutes at 350F. Uncover and bake about 15 minutes longer or until noodles are soft & cheese is bubbly. Let stand 15 minutes before cutting.

The mac & cheese listed earlier in this thread was AWESOME. I second someone's comment on not overcooking it. I actually turned mine off after about 4 hrs as someone suggested and it was perfect

Any other recipes....more chili recipes??? soups????

I am w/ Cindy (Mothermark) with just TWO ingrediants!!

Pork Chops (at least 1/2 inch thick)
1 can Peaches (if you are making for many, use a big can: if you are making for 2-3 people, use a small can!!)

Serve over Rice, so good!! DH and I like the cooked peaches over the rice but the kids dont so I save a few out for them!!

Thanks for all of the great recipes! I didn't know you could put frozen meat in the crock pot. Today, before work, I put in 3 frozen chicken breasts, a can of cream of chicken soup, and 2 cans of water, put it on low, and by the time I got home (left at 6, came home at 5:30) it was perfect. The chicken was so tender! We had it with noodles.

Default good day for a crockpot recipe

Good Morning ladies we are snowed in UP here in the North Country, 13 inches that started out as freezing rain on Friday night so slippery roads they even cancelled church,.........but what really bummed me out.......I was supposed to go to an TAC show last night and it was cancelled (hubby didn't want me to drive in this weather anyway) but my girlfriend was the demo and had designed a cute scrapbook page I was excited to make ;)........oh well maybe I can get her to still let me make it......hint hint stampinscrappinqueen! ;)

Love this thread!

Today I am making Taco Soup in the crockpot

Taco Soup

Brown:

1 - 1/12 pounds lean hamburger
1 onion (I use the white onions already cut up near the salad mixes)

Add

1 pkg Taco Seasoning and stir it up

Add above items to a crockpot with the following:

1 large can diced tomatoes
1 large can tomato sauce
1 can black beans with juice
2 cans whole kernal corn with juice
1 can black pitted large olives with juice (I do two as we love olives)

You may have to adjust the above ingredients depending on the size of your crockpot as I have a very large pot and it is nearly full to the top.

Cook on low 4 hours or so. Everything is already cooked so you can do longer or less depending on your time frame. You can also do it on the stove and simmer for approximately 45 minutes stirring regularly if that is easier.

Top soup with any or all of the following: cilantro, avacado, chedder cheese, sour cream, tortilla chips. etc.

I serve it with a green salad with avacodo, mandarin oranges, walnuts and Safeways delicious Jalapeno Ranch dressing

Did anyone mention this recipe:

Cranberry Turkey Breast

Boneless turkey breast with gravy packet
1 can cranberry sauce (I use plain,but whole berry works, too)
1 packet Lipton dry onion soup mix

Mix the cranberry sauce, thawed gravy from the packet and onion soup mix in crock pot. Add the frozen turkey breast (I only thaw it enough under running water to loosen the gravy packet) in the crockpot.
Cook on low for 7-8 hours. I have to skim off some creepy looking white stuff (sorry, I know that sounds gross!) before serving.
I have this cooking now, while I am finishing up my swaps for Regionals, and the house smells YUMMY!

Wow, I can't believe it took me this long to find this thread. Don't know if this will appeal to everyone since it uses cabbage, which many people dislike, but my DH and I love this super quick and easy and very filling soup recipe. The bonus is that it's very low in calories -- practically all veggies -- so very diet friendly too!

I love to throw this soup together in the morning-- it literally takes as long as it takes to open the bags and cans and stir the lot--and come home to a ready meal.

5 minute vegetable soup

One bag of cole-slaw mix (just the shredded cabbage & carrot)
One bag of frozen mixed vegetables
1 can potatos
1 can diced tomatos
1 can tomato paste
3-6 cans low sodium low fat chicken stock (enough to fill up your crock pot)
Italian seasoning to taste.

Throw all the ingredients into the crock pot and stir. Cook on low for 8-10 hours.

You can add whatever other veggies you have on hand, too. I sometimes will throw in sliced yellow squash or mushrooms or celery or cauliflower -- whatever needs to be used up before it goes bad.

OMG This is so great! Thank you SO much for doing this!
I just printed the whole thing out to give to my daughter who is getting married in May and is less than an experienced cook! I think I will give her a crock pot too and then at least I know she will be able to "get started". She has never lived away from home (either has her fiance) and I have to admit that I spoilled her a bit too much. She's never exactly been the
Susie Homemaker" type and would much rather spend her time in an art studio than a kitchen! Can't say I blame her, but she IS going to have to learn how to fix dinner and I think these delicious sounding recipes that all of you wonderful ladies have shared will give her a great start!

Sarah, that is a great gift for a young couple. Print out the recipes and put in a little binder that you decorate.

I think you are right. I could make her a cute recipe book. I am also thinking of asking everyone who comes to her bridal shower to bring a favorite recipe. Maybe I will make some recipe cards- all handstamped, of course! Then I can ask them to write them out in their own handwriting which I think would add a very personal touch.
Anybody have any thoughts or ideas?

No, it's not a hijack, I've been thinking of putting these in a little binder for myself. Great idea for a shower, too.

Hey if we turn it into a discussion of how to make a recipe book with stamping it should stay in the general stamping forum!

I recently made myself a binder to store miscellaneous recipies such as these. I used the "What's for Dinner?" Set to make little dividers for the different sections of the binder & mounted them on brightly colored card stock so they'd be easy to find. For my crock-pot recipies I used the categories: Miscellaneous for dips, vegetables for vegetarian recipies, Meats& main dishes for dishes containing meat, and desserts for the desserts.

Cool! Can you post pictures for us?

Glad you both didn't consider me a "hijacker", LOL! I know that can really bug some people. But yeah, all these recipes are great and it would be fun to hear lots of ideas of how we can put them all together or neat things we can make with them!
