I use the placement mats that you get at wal-mart around the holidays. They are meant for dishes, but, I find that they are just the right thickness and have good cushion. I also put a piece of SU grid paper on top, when the grid paper gets messy, I just toss it and add a new sheet. If you wait for the right moment you can get those mats for about .25 cents each. I've got some from valentine's day, easter, and christmas. LOL
I recently unmounted my stamps right back to bare rubber. I still wanted a bit of cushion when I stamped so I went to the foam isle of Hobby Lobby and picked up a thin and regular thickness large sheet of white foam. I think one cost 40 cents and the other was 80 cents or so. I got both because I wasn't sure which I would prefer to stamp on (the thin one won), but I found that it also is a great way to protect my table, and if it gets messy I really don't care. I've been using it for a month now and it's worked out really well, and I love the price!

I usually use a piece of cheap white copy paper so I can just toss it when I'm finished with the project.
i have a big self-healing cutting mat. but for some reason, the color of it rubs off on my projects. SO i bought a BIG (18x24") pad of newsprint paper. i use a binder clip to clip it to the cutting mat. and that way, i can not have to worry about getting ink or anything onto my tabletop.

I use the TAC Work Pad, similar to the SU grid paper pad. I just leave the entire pad on my table, and when it gets too inky or messy, I tear the top layer off and toss it.
If the pad is a new one, I will start with 10 or so sheets at a time on my desk to avoid the *thickness* between the pad and table, or the chance of me spilling glue/drinks/ink refills/etc on the entire pad. (Trust me, I have ruined a whole pad once or twice, lol)
I use something that I got from the UK, it's called a *Messy Mat*, and it's about 18" by 25". I got two of them when I did crafts a lot with two children I used to mind. They knew they weren't allowed do anything with ink or glue without getting the Messy Mats out first. They're really just some sort of plastic sheet, but they are great, and everything wipes off them.
