scatty, do you mean when the cardstock is dark? In that case, I make a card front and affix it to a white card (usually the Value Pack ones that Michaels' sells), so I can write on the inside. Versatile Verses are some nice sentiments for card insides, and I also use God Bless often for a coordinating outside and inside sentiment.
These two "poems" are cute to put in a card.. no author was given when I received them. I've edited the second one to send to those I'm not "close" with. It came off a bit harsh for an acquaintance - but that's just me.
I didn't sign this card before I sent it off to you.
Instead it holds my warmest thoughts, invisible but true.
And if you find a time you need to brighten someone's day,
then take this card and sign it and send it on its way.
I know these cards are pretty,
I made them all myself.
But cards are meant for sending,
not sitting on a shelf.
So choose some friends to mail them to,
and send them out the door.
'Cause if you keep them to yourself,

I most often do a "professional style" card on my computer for the inside stuff. I have an American Greetings program that works well and is super easy to learn to use.
To be more specific about what I put on the inside - I borrow verses that I've saved from favorite cards I've gotten from friends; I go to the dollar store and buy a handful of cards from time to time to add new sayings to the insides (this is a really good place to get verses for sympathy cards and for birthdays); and lastly, I will make up my own rhyme to fit the occasion (I recently needed a food related card for a friend and I made up a poem about friendship that had cooking terms in it...corny, but it worked for the card.)
I do use the stamped sentiments that SU has for a few cards that I send out, but they usually are for cards that have to be sent immediately and that I have no time to go to the computer to do the "inside".
Hope this helps. I struggled with this same dillemna for a long time before I finally figured out that I needed to have the ability to personalize the inside of the card, just like I do the outside.
I just received a related question from a co-worker! I made a card for a fellow co-worker & another wanted to know why I didn't stamp anything on the inside! I told her I prefer to write my own message, just because it's more personal! Sometimes I use a verse stamp, but usually I prefer to just write my own message!
I usually stamp the inside with a saying. Most of my sayings are SU sayings. I also dress up the inside of the card by stamping a matching item from the front of the card. For instance, if I'm doing flowers on the front, I do a single flower next to the words. Sometimes I just layer the same colors I used on the front on the inside. Usually they are cut out in different shapes - sometimes just a strip of color behind the words. I love to see how creative I can get on the inside to match the front!
Call me crazy but I like to continue the creativity on the inside of the card!

I am ROFL OMG!! those are priceless little poems. I get such a kick out of those because i'm constantly chiding my friends and dear ones for those homemade cards they like to keep/

I leave the inside of the card blank until I need to use it. I have a number of verse stamps or "Happy....." etc that I stamp inside. My hand writing is the pits so I never write more than a sentence below the verse. If the cs is dark, I stamp in light cs and tape it inside.
I just bought one of the Fiscars fancy edgers so will try white copy paper inside too with fancy lace edges.
I either stamp a phrase for the occasion or just write something by hand... I do try to use the ink matching the front colors or add a little element like a sticker, tag, stamped image going with the theme...

If you like using dark cardstock, Steadtler pens makes a line of gel pens that work great on the dark cardstock. It shows up really well and dries so it doesn't smudge. The pen itself is cool too. The barrel of the pen is triangular instead of round.
As for the question, I sometimes write a little verse, but mostly I just sign it. It depends on the mood I'm in, or the intention of the card.
