Right now I am having to force myself to NOT use the Heartfelt Thanks set...I've used it so often. Also, I really love the newer, Easy Elegance set. When I first got it, I played for hours with it and had so much fun.

Despite the occasional "mood" to dig deep for a different set, The first ones I reach for when I just "need to stamp" are:
Itty bitty backgrounds
watercolor garden
paint prints

It depends on the day and my mood. What's sad is I have sets I have NEVER used. It's my goal this year to make sure I get use out of every set that I own and to make at least 5 cards per set (of ones I haven't used yet or in a very long time). But like someone else said - I go through phases on what I use the most, and it's likely to change from week to week, but every Christmas, I always end up using SNOWFLAKES on one of my cards or LOVELY AS A TREE! I have like 20 Cmas sets - it seems I only need 2. HA!
Mine is Paint Prints and my Perfect Paisley background, not at the same time (although, now there's an idea). I have just ordered a load of background stamps to help with my addiction to PP, lol.
Shapes and Shadows. I did not care for it at all when it was a sneak peek for a new IB & C, but grew to love it that year once I saw all the great things you could do with it. Now it's the one I use all the time. I have to force myself not to use it at a workshop as I am thinking people may be getting tired of seeing it!
Shapes and Shadows is the "staple" of my stamp diet... even if I don't use it that much anymore... it is my "easy" set.... requires no thought anymore... just stamp it! I loooove that set!
Apart from Itty Bitty Backgrounds.... I'd say it's an even split between Art of Life and More Petal Prints. Finally just got Petal Prints, so we'll see if that one moves up onto the list!

I LOVE Mixed bouquet! Also, Headline Alphabet. I was hesitant to buy it, I dont really use alphabet sets that often, But this one is getting its moneys worth out of it!
Toss up between Shapes and Shadows and Natural Beauty. They're both so pretty without very much effort on my part!
