I swaped some of mine. (Loads of Love, Shape Ups & Quick Thinking). I also struggled with whether I should swap or not. Everyone was so helpful and said that I should get stamps that I like!! ;)
Good luck - I sent in my paperwork yesterday - the wait is going to kill me.

PS There is a thread in Announcements where all of the new demos are getting together. Some of them even posted what sets they swaped. Maybe that will help too
I would make sure that each of the set inspire you. Also, if you swap out a set, just make sure that you replace it (or have one in your collection) that serves the same purpose. Ex. 2-step stamping, words, Outlines for watercoloring, all-occasion.
I didn't stick with what they offered. Loved the Heartfelt Thanks but changed everything else to suit my needs and wants which included getting a background stamp. They give you a pack of Heartfelt Thanks inspirations sheets with it too (but maybe that's b/c I kept only that one). A friend of mine that joined as a demo swapped out everything but Heartfelt Thanks.

I swapped out all the sets but one. There are inspirations sheets for Heartfelt Thanks, like someone already mentioned. Other than that, there are just some samples in the getting started book. I would get the sets that you want.
When I signed up in April, I switched every single set to something I wanted. I got lucky and none of the ones I chose retired! Whew!
Choose what you feel you will be most creative with. I agree, try to choose sets that will offer you variety in demo'ing many techniques like a previous poster commented. Everybody has their own style, so choose the sets you like and will get use out of.
I would definitely swap out anything you don't really care for. I should have done that when I became a demo and am now stuck with a set I didn't care for, haven't used, and can't even seem to trade off because everyone else already has it.

I just received my kit on Wed. I switched out all the sets except Loads of Love and Heartfelt Thanks. I'm only going to be a hobby demo so I wanted to get the sets that I liked. I received in my kit the inspiration sheets for Heartfelt Thanks and one of the booklets has some samples with the sets that would normally come with the kit. I don't think it was anything you couldn't adapt to another set. I think you should get would you would be comfortable demo'ing

I'm in the process of signing up right now and I'm swapping out just about everything. I already have about all the items in the kit anyway, so except for the stamp sets (I'm swapping all but 1) and the wheel, it will all be duplicates. I'm doing this just as a hobby demo, for the discount mostly, so I don't need to consider what others might like. I get to please myself only on all my choices!
If you're going into this to do a lot of demo work, I'd concentrate on more simple sets and easy techniques that beginners can do at your workshops. I know that I first fell in love with stamping because it was so simple, yet yielded such pretty results. The choices they provide in the kit are probably fairly wise for general demo use, specially if you won't have a lot of supplies already.

I definitely would swap out anything you don't like! Don't know your purpose for signing up, but even if you're gonna go gung ho and do it for the money, I can't imagine that you'd enjoy demoing a set you don't like!
I signed up mostly as a hobby demo, so I chose things that I wanted, not what would be good for "business."

I swapped out most everything when I signed up in January... the main problem is the videos and/or books were geared toward the sets in the starter kit!
I swapped out half of the stamps and all but one ink pad. I would look at what you have and like the others said above, pick ones that inspire you. I had some of the stuff and all the ink pads but Pixie Pink. I wanted my first party to go with the season, so I also looked at that as far as paper and stamps. Good Luck!
i swaped out every single set last month when i signed up. my stampin budget went into buying to kit so i got some of the summer mini sets. i'm planning of being a hobby demo...it might change later but i wasn't worried about not being able to demo those sets. but definitly get sets you love. because if you really love what you are demoing your customers would know it. i'd hate to sit through a workshop with a demo that was forcing herself on a project that didn't make her enjoy it.
I am in the process of filling out my paperwork- I traded everything that I could! I have been stamping for about 2 years and wanted to do this for the discount- I was tempted to keep heartfelt thanks- but really didn't like it!
