Default Yummy!

Ok...I had posted earlier today about my successful Open House and mentioned the 2 easy cakes I baked. I had some requests for the recipes, so I am sharing them here. They both start with box mixes. The first is called Lemonade Cake. A lot of you have probably made it, but this was my first time. It was big hit. Make a lemon cake according to box directions in a 9x13 pan. Cool 15 minutes, then poke holes all over it with a fork. Then take thawed lemonade concentrate ( I used pink lemonade) mixed with 3/4 c. of powdered sugar and pour over the top while cake is still warm. Cover and refrigerate at least 2 hours. Frost with white or lemon frosting.

The 2nd cake is called:

Darn Good Chocolate Cake

It is made in a bundt pan (greased and floured)

Devil's Food Cake mix (the kind without the pudding!!!)
1 pkg choc. instant pudding
4 lg eggs
1 c. sour cream
1/2 c. warm water
1/2 c. veg oil (canola, corn, safflower, etc.)
1 1/2 c. semisweet choc chips or mini chips

Mix everything except the choc. chips - low speed 1 minute, then med. speed 3 minutes. Fold in choc chips. Bake till it springs back when lightly pressed with finger - 45-50 minutes. Cool on rack 20 minutes. Run a long knife around edges and invert. Super yummy for you choco-holics!!!!
(It really is better to add in the pudding than to use the mix with the pudding already in it!!!)

I also have a recipe for chcolate pistachio cake that starts with a white cake mix - it is the BOMB!!!!!!

OH. MY.

When I read the directions for the Lemonade Cake, I said just that. My DH (sitting across the room, at his own computer) said: What?!!!

Ha!

I know what *I'm* making tomorrow. If he's REALLY LUCKY, he might get ONE LITTLE PIECE OF IT!!!

I'd never heard of this. But I LOVE lemon things! Thank you, Jami!!! This sounds particularly great for a summer event on the hot, humid Virginia coast!

You should mention that the Darn Good Chocolate cake is from a book called the Cake Mix Doctor by Anne Byrne. This is just one of the many recipes that are just wonderful!

This is the cake that all of my friends request! (I also do it as cupcakes)

Yes, thanks. I meant to mention the book, but got carried away typing. It is my favorite book. Friends always want to know what I'll be making next . Pistachio is the most often requested. I've been baking a lot less since I've been back on Weight Watchers though. Cake is definitely one of my very favorite things!!! I used to bake from scratch, but hardly any need with this awesome book

Jennifer (otter005) just told me about diet coke cake. Have you heard about it? Sounds awesome - only 3 points (WW) per slice!!!!

I've heard of Coca-Cola cake. (I'm Southern, you know!) But no diet version ... DIET? That's a four-letter word!!!

We call that first one the hundred hole cake. We use OJ instead of lemonade. Funny!

I make something similar to the Lemonade cake called a Jello Poke Cake too. Use a white cake mix, poke holes, mix up jello with 1 cup boiling water and 1/2 cup cold water, pour over, refrigerate until set and then frost with Cool Whip. I like to use half a pack of orange and pour over about half the cake randomly then half a pack of cherry and pour over the other half. Very pretty and tasty.

That cake is the bomb! I loooooove it. Mmmmmm. Mmmmmmmmmmmmm. Wanna make me some for dinner? (Yes, for dinner, LOL, no need for anything else if i have a whole pan of jello cake!)
