Just wanted to tell everyone that I had a great time at my first shoebox swap. Also I want to thank Lisa and Audrea for all their help. Many loved the Cranberry Nut Coffee Cake and wanted the recipe. Please see below.
CAPE COD CRANBERRY NUT COFFEE CAKE
1 stick margarine
1 cup sugar
2 eggs
1 teaspoon baking powder
1 teaspoon baking soda
2 cups all purpose flour
1 cup sour cream
� teaspoon salt
1 teaspoon almond flavoring
1 16-oz. Can whole berry cranberry sauce
1 cup chopped walnuts
� cup confectioners� sugar (for topping)
Cream margarine and add sugar gradually. Add unbeaten eggs one at a time. Mix baking powder, soda, flour and salt and add to egg mixture alternately with sour cream.
Add the flavoring and � cup of the walnuts.
Grease and flour well a tube or bundt cake pan. Put a layer of batter in the bottom of pan. Then add � can of the cranberry sauce and spread evenly.
Add remaining batter, putting remaining cranberry sauce on top. Sprinkle with remaining walnuts.
Bake in a 350-degree oven for 55 minutes. Remove from pan after cooling five minutes.
Topping
Mix well � cup confectioners� sugar, 1 tablespoon of warm water and � teaspoon of almond flavoring.
Drizzle over the top of the coffee cake only after it is taken out of the pan. Let topping run down sides of the cake.
